Even though Thanksgiving has just passed and we’re all still bemoaning how much we overate, I’m already thinking about Christmas and the dessert portion of the day. Thanksgiving is all about the pumpkin pie, but Christmas is all about Santa and his cookies. Sure you could go with a classic chocolate chip or oatmeal raisin, but why not spice things up with some thing that’s a little bit traditional in a non-traditional way? I actually pinned this recipe quite some time ago with the plan of making them at some point during the holidays. My mom and I test drove them over the weekend and, because my dad couldn’t stop sneaking cookies, we’ll definitely be making a couple more batches for Christmas. We followed the recipe pretty closely, though we did add additional Cinnamon and All Spice to the Apple filling to liven everything up a bit more. This is a supremely easy recipe to make and is even more supremely delicious. Apple Pie in cookie form? There’s just no way of going wrong.
