As you may have noticed from my numerous brunch posts, I love me ups some breakfast food. But going out to brunch every single Sunday is a little difficult for my pocketbook and my schedule to swing. So every now and then, I like to whip up some breakfast food for myself, and whoever is crashing on my couch at the moment, that is traditional but with a slight twist to keep things interesting. Enter these. Because carrots become sweet when cooked, these healthy-ish pancakes don’t require a lot of extra butter or syrup (thought that won’t stop me).
