With the onslaught of Fall I’ve begun to have a serious craving for more earthy flavors and dishes. I’ve made Chicken Marsala once before, but I took the slow cooker route simply because I was afraid to try my hand at a more traditional, stove-top, hands on approach. But if you want big rewards, you’ve got to take big risks. I’ve gotta say, I think I prefer the stove-top method. I chose to keep the rest of the dish relatively healthy with a bed of roasted asparagus and steamed potatoes. The sauce doesn’t thicken up too much to where the dish feels heavy. Instead, it has a light but flavorful quality that really hits the spot on a Sunday evening.
