Here’s a recipe for easy pasta salad that everyone should keep in their back pocket, especially this time of year. It makes a ton of food for lunches and leftovers, it’s quick to make, only uses one pan, and is fresh with a bit of a bite. I mean what more could you ask for from such a simple meal? Literally, if you can boil water you can master this recipe. Plus it’s fun to play around with the presentation. Imagine this bright and delicious dish served in mason jars at a picnic!
Easy Pasta Salad
Ingredients:
1 lbs. Rotini Pasta Noodles
1 Green Pepper, roughly chopped
1 Yellow Pepper, roughly chopped
1 Red Pepper, roughly chopped
1 Purple Onion, roughly chopped
1 lbs. Cherry tomatoes
1 Bottle Italian Dressing
Directions:
1. Bring a medium-sized pot of water to boil; cook the rotini noodles to desired level of doneness
2. In a large bowl, mix the peppers, onions, tomatoes, and noodles
3. Add as much dressing as preferred and continue to toss contents of bowl until everything is well coated
4. Serve pasta in individual glasses, jars, bowls, etc.
