This past weekend I had the great pleasure to attend a friend’s annual family cookout. It’s a great event with great people. I knew well in advance of the weekend that I wanted to make this recipe. The cake part was easy enough to make with no problem. The icing, on the other hand, was a hurdle that I wasn’t able to overcome until after the cookout. The first two attempts I followed the recipe that accompanied the cake but I just could not get the frosting to firm up past a sloshy, sugary soup no matter how much sugar I added. For my third and final attempt, I made a traditional butter cream frosting, swapping out the vanilla extract with lemon juice and added a few drops of food coloring for that perfect pink tint. The end results were absolutely perfect for a summertime cookout.
