I tend to treat food seasonally, like clothes and outfits. I like my hearty, savory meals when it’s cold, and fresh lighter fair when it’s warm. But when its somewhere inbetween, like it has been lately in Atlanta, dressed up sandwiches are a must. A protein that’s not too heavy, with added accoutrements that aren’t too light, make for a great lunch. This Salmon BLT keeps things light, but when it’s wrapped in bacon with baby spinach and tomato, every bite has a great crunch to it. And since we’re still holding on to our 2017 resolutions, here are some really easy and delicious carrot fries that give this dish a little sweetness to round out the meal.
