Christmas Cookie Exchanges have become a popular ritual over the last several years (maybe longer). My friend Megan hosts one every year for our group of girls and it is always a blast (more on this year’s later today). I decided to try and hedge my bets a bit with my cookie by slightly tweaking a known favorite in the cookie realm; the s’more. I had a bit of fun with this, what with setting marshmallows on fire in my apartment and dipping the sandwiches in a rather large bowl of melted chocolate. I tend to go overboard with my cookies and thrown in everything I can think of except the kitchen sink. This year I added just one slight adjustment with sea salt, hoping to make this cookie sweet and savory in one bite.
Sea Salt S’mores
Ingredients:
1 box of Graham Crackers
1 bag of Mini Marshmallows
1 bag of SemiSweet Chocolate Chips
Sea Salt
Directions:
1. Break apart each graham cracker into 4 equal parts until you have twice the number of crackers as you need sandwiches
2. Using a metal kebob and matches, or a microwave, heat the marshmallows to the desired level
3. Cover half of the graham crackers in the heated marshmallows; stack another graham cracker on top of each to complete the sandwich
4. In a microwaveable bowl, pour the entire bag of chocolate chips; microwave for 1 minute; remove the bowl from the microwave and, using a spatula, stir the chips until fully melted
5. Dip each sandwich about halfway into the melted chocolate; set aside on a piece of parchment paper
6. Sprinkle Sea Salt on each cracker; let sandwiches set overnight either covered on the counter or in the refrigerator
