Smoked salmon can be a tricky item to serve as it can easily put some people off, so it’s all about the accoutrements you plate it with. Sure a bagel and some cream cheese are the classic partners for smoked salmon but what if you’re wanting something a bit more elevated and fresh. I find that this recipe is great for parties with heavy hors d’oeuvres. The smoked salmon goes really well when mixed with the green onions, dill, and capers. The crisp cucumber keeps the bite fresh and gives it a good crunch. I once served this little stack at a Christmas party and found several guests in my kitchen huddled around and feasting on the excess salmon mixture. It’s that good.
Smoked Salmon Cucumber Stacks
Ingredients:
1/4 cup finely chopped green onions
2 Tbsp. plain 2% reduced-fat Greek yogurt
2 Tbsp. canola mayonnaise
2 Tbsp. drained capers
1 Tbsp. chopped fresh dill, divided
1 (12-oz) package cold-smoked salmon, coarsely chopped
3 English cucumbers
1/8 tsp freshly ground black pepper
Directions:
1. Combine the onion, yogurt, mayo, and capers in a medium bowl; add the dill and salmon and stir until combined
2. Peel cucumbers in alternating vertical stripes; cut cucumbers into 1/2 – 3/4-inch-thick slices
3. Spoon about 1 Tbsp of salmon mixture onto each cucumber; chill until ready to serve
