Great recipes are the ones that are passed from person to person, or family to family. Something about getting a recipe from a friend instead of a book gives me more of a connection to a meal. This dessert has been passed all around in my family. So much so in fact that the origins of it’s name and even the recipe itself is somewhat debatable. All I know is I got it from my mom, and since then it’s become a staple dessert when strawberries are in season.
Strawberries Melinda
Ingredients:
Angel Food Cake
1 qt. Strawberries
1 tsp Sugar
7 oz. Sweetened Condensed Milk
8 oz. Soft Cream Cheese
1/2 pint Heavy Whipping Cream
Directions:
1. Wash, clean, and cut up strawberries (leaving several to the side for garnish)
2. In a bowl, add strawberries, a little water, and sugar together; mix and set aside
3. Shred the angel food cake into a large, tall dish, or line the bottom of several smaller bowls (see below)
4. Mix condensed milk and cream cheese together until smooth
5. Whip the whipping cream in a separate bowl until stiff
6. Fold whipped cream into the milk mixture until combined
7. Spoon cut up berries and juice evenly over the cake
8. Pour mixture evenly over the strawberries and cake
9. Slice reserved strawberries to decorate the top
10. Refrigerate until ready to serve (best if made the night before)
