Popsicles that are a bit out of the ordinary are a huge trend right now, especially in Atlanta which is home to the King of Pops. These tasty treats can be found at tons of popular street corners (not in a shady way) and events and are quite simply addicting. So I borrowed a bit of inspiration from the King when I made these summer weekend pops. I loved the idea of sprinkling the final product with some graham cracker crumbs. But one of my favorite King of Pops treats was a Key Lime Pie Popsicle with a graham cracker stuck inside. I just loved that added touch at the end. So I decided that a strawberry cheesecake popsicle could benefit from just such an add-on. One thing to keep in mind when making this yourself, make sure that you swirl the strawberry and cream portions really well. I could have been a bit more diligent in my mixing skills.
