This is a bit of the new meets the old for me, and not the way you might imagine. I’ve been making these cookies for several years simply because…well… I like jam. Over the last month or two of my insane travels, I have somehow accumulated quite a jam collection from aunts who obviously make their own, roadside stops for boiled peanuts, and just pure intrigue (Fig Raspberry Orange Ginger jam?!). I recommend using a small measuring stick to help make your jam crater. Sometimes using the thumb creates a wonky indentation that jam inevitably spills out of during the baking process. That’s just wasteful. Use any and all jam you want with your cookies. I decided to use the FROG jam I picked up in Jekyll Island and a blackberry jam I got at a boiled peanut stand on the side of the road. Keep it classy. And since these are tea cookies after all, I figured I’d eat them with a cup of tea (having just realized I kinda like hot tea from making this concoction). A simple Earl Grey seemed both complimentary to the cookies and refined enough to turn cookies into an adult indulgence.
