I think I have it pretty well established here that I enjoy making a watermelon salad. I state this first because I don’t really like watermelon on it’s own. I also don’t particularly like cucumber, limes, cilantro, or… well… salad when they are independent of each other. But toss them all in a bowl together and I’ve got to say, they make a delicious, fresh, crisp dish. I followed this recipe from Cooking Light for a recent Sunday night get-together with friends. It’s a refreshing little dish that can work both before and during any meal. It’s tangy and cool, crisp and sweet. Personally, I swapped out the watercress for some baby arugula but that’s just a personal preference.
