Spring brings, among other things, fresh veggies and produce the lighten out meals and help lighten our waistlines for the beach-going season. Last weekend I had some girlfriends over for dinner to catch-up, laugh, and of course eat. I made this salad recipe as the main entree because the various vegetables and roasted salmon make this a filling dish rather than a typical side dish or starter course. Besides being a beautiful plate of food it was also delicious, especially with the herb dressing tossed in. For an evening heavy on the laughs, this dish was light on the calories without sacrificing on taste.
