It’s not really a holiday if it doesn’t have a special cocktail, amirite? So for next week’s Valentine’s or Galentine’s depending on your current status and level of fun, here’s a cute, pink cocktail with bubbles to enjoy. I had originally planned on making this with gin, but when I sat down to actually make it, I reached for the gin I though I had only to discover I was out. Oh well, this cocktail is still great without the extra booze, but feel free to add some if you’re in the mood to get lit. I have a blogger Galentine’s party this weekend that I’ll be recreating this little libation for, and you’d better believe I’ll be including gin in that one. 😉
Berry Much in Love Potion
Ingredients:
1 bottle Trader Joe’s Raspberry Cranberry Spritzer
1 bottle Sparkling Rosè
1/2 cup Simple Syrup
1 cup Gin (optional)
Blackberries for garnish
6 Sprigs of Thyme plus more for garnish
Directions:
1. In a serving pitcher or punch bowl, combine the Spritzer, Rosè, and simple syrup (include the gin if you’re opting for a boozier cocktail).
2. Add 6 sprigs of thyme to the pitcher or bowl; let steep for 10 minutes in the refrigerator (you can let this sit longer for more of the thyme flavor but you will lose some of the fizzle in the spritzer).
3. Place 2-3 blackberries and 2-3 sprigs of thyme in each glass; Pour the chilled spritzer mixture into each glass over the blackberries and thyme
4. Clink glasses and have a Happy Valentine’s Day
