A PB&J is the quintessential comfort food, and this recipe is a simple riff on the classic. With all of the barbecues and get-togethers you’re bound to be invited to once football season kicks off, this makes a great snack to take (doubles as a great dessert) plus it’s super easy to make. I’m not even a huge peanut butter fan (I always preferred exponentially more jelly in my PB&Js) and I can’t help but eat at least two. The jelly/jam layer can be any flavor you prefer, but keep in mind that the smashed fruit really adds to it’s yumminess and kicks the tartness up a notch. Now when you’re spreading the bottom peanut butter layer, it’s going to be a little more difficult to spread than your typical peanut butter but keep with it until you’ve got it evenly spread out on the pan. The top layer is even more difficult because of the jelly underneath so I used some peanuts I had on hand to sort of fill-in the wholes where too much jelly was poking through.
